November already, but I don't know how to be anything but fashionably late for this (last) month's Halloween edition of End of the Month Eggs on Toast Extravaganza. That silly tofu absolutely insisted on doing some yoga first before dressing up in a very revealing sweet and spicy curried egg salad costume - spilling out of it everywhere! I've said before how much I don't like tofu dressing up as tofu bratwurst, tofurkey or soy chicken, but this is different. Tofu is not really trying to pass itself off as eggs - only for the EotMEoTE Halloween Costume Ball!
The salad is made with chopped tofu, scallions, red onions, green bell peppers, raisins, and cashews, then dressed with a mixture of mayonaisse, a touch of dijon mustard, minced garlic, curry powder, salt, and pepper. I couldn't help but add a bit of hot sauce, too. Another treat? Putting into pita bread holds it all together better that two slices of bread, so I didn't have to use as much mayonaisse (even though I do love that mayo!)

i know, i know, "curried" is nothing new under the sun, and neither is tofu as a stand-in for hard boiled eggs, but at least it looks better than the "eggless" tofu salad they have at the whole foods market food bar :)

All I can say is wow. The sandwich looks absolutely stunning and I wonder when I will take a hold of one. Halloween makes my belly full as neighbors constantly give their share of cooking.
